A healthy taste of summer in less than 10? Yes, please. Next time you’re craving something cold and creamy but want to skip the ice cream, whip up this quick and simple healthy, vegan frozen dessert. It’s incredibly refreshing and made with some of our favorite ingredients; Watermelon, Coconut and Lime.
5 cups watermelon cubes
4 cups coconut milk
Juice from one lime, or more to taste.
Combine all ingredients in a food processor, lay out in a baking dish, cover by laying plastic wrap on top of mixture and freeze for four hours. Enjoy! If you need to leave your sorbet in the freezer for a longer period of time, just let it sit out for 20 minutes or so at room temperature so it’s a better consistency for digging in! Chef’s Note: If you want an instant treat, keep frozen watermelon chunks in the freezer and whenever you get a craving, just pop them in the food processor with some lime juice for an instant sorbet and enjoy immediately.
